At the beginning of each regional section is an essay describing characteristics, difficulties, etc. Each wine is given a rating from 50 to 100. There are ratings as well of quality in relation to price. An extensive list of producers and distributors, giving names, addresses, telephone, fax, websites, and e-mail addresses (pp. 433-72) is followed by ample indexes (pp. 475-508). At the beginning of the book are comments about the state of the market and the state of the art of winemaking.

Melo Lapa wrote a preface for this edition, in reality apparently the 7th—(or is it the 8th? There is considerable confusion on this. See Biblioteca Nacional, Livros portugueses de Cozinha 202–205.) The first edition appeared in 1876. The Biblioteca Nacional catalogue cites a 6th edition, dated 1924, and says a 7th edition was announced in the Journal das Damas, Lisboa 4 April 1867 [sic—i.e. 1967?]. Melo Lapa says the most recent edition was the 6th, published in 1947. How this can be the 5th edition is a mystery to us, unless it is the 5th Vega edition, which also seems unlikely, as the copyright to Melo Lapa's preface, in which he justifies Vega's re–publication of the work, supposedly last published in 1947, is dated 1993.

Roughly the first half of the book deals with Portuguese cheeses. Other European cheeses are discussed on pp. 122-59. Then there are sections on cheese at the table, utensils, serving, conserving, nutritional value, and finally cheese in cooking. Maria de Lourdes Modesto is the author of several cookbooks and other books about food, including Cozinha tradicional portuguesa, generally considered one of the best, if not the best, currently available book of Portuguese recipes, which has gone through 19 editions in Portuguese and 4 in English. Manuela Barbosa, with a degree in pharmacy from the Universidade do Porto, is a specialist in the technology of milk and milk-derived products. She is the co-author with Fernando Vieira de Sá of O leite e os seus produtos.

The first edition of the Arte de Cozinha appeared in Lisbon, 1680. The present text uses the edition published by Officina Ferreiriana, 1732.
